As adept at mixing recipes as he is at adhering to tried and tested ones, Bauer ups the ante on the traditional Malaysian sate, or grilled skewered meats, by swapping meat with the utterly luxurious foie gras. The foie gras is beautifully grilled, and the painstakingly prepared garlic peanut sauce is the perfect foil for it.
